I recreated Fannie Farmers’ “Wintergreen Wafers”. Her directions are somewhat lacking in specifics but don’t worry I measured everything out for you. Here’s the recipe:
- 1/2 oz tragacanth
- 1/2 cup cold water
- 3-3/4 cups confectioners’ sugar
- 1-2 drops essential oil of wintergreen
- 1 drops lemon essential oil
Soak tragacanth gum and water overnight. Strain. Combine sugar, tragacanth, and essential oil until it can be rolled out like a dough. Cut into 1 inch squares. Cover Wafers overnight to dry. Voila! Now you have mints that taste like those white puffy restaurant mints that melt in your mouth.
The best thing about this recipe is that you can customize the essential oils to suit your taste buds. Fannie recommends the following essentials oils: lemon, clove, or sassafras essential oil. Just remember essential oils are generally not meant for human consumption. Therefore, do your research before going crazy with essential oils and use them sparingly.
