Fannie Farmer’s waffles aren’t very different from today’s modern waffle but they sure are tasty. About the only difference is the increased amount of baking powder used. If you’d like to know why more baking powder was used back in the day, then check out my post on Corn Bread (Sweetened with Molasses) by Fannie Farmer.
Recipe
- 2 cups flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon melted butter
- 1 cup milk
- 2 egg yolks
- 2 egg whites
Mix dry ingredients together. Meanwhile, separate egg yolks from whites. Beat egg whites until stiff peaks form. Add milk, well beaten egg yolks, and butter. Fold in egg whites.
